The aim was to enhance the inhibition of Clostridium sporogenes in cheese by manipulating three independent variables: Lactiplantibacillus plantarum (utilising two different strains, labelled as A and B, the total cheese inoculation rate was 2% overall and the A : B ratio ranging from 25% to 75%), and lysozyme (ranging from 0 to 0.2 mg center dot L-1).The response variables considered in this model cheese study included the Clostridium count, pH, and titratable acidity. The results showed that the optimal conditions for inhibiting C. sporogenes and preventing late blowing defects in cheese were achieved with an L. plantarum A : B ratio of 49.54 : 50.46%, nisin at a concentration of 1.762 mg center dot L-1,and lysozyme at 0.2 mg center dot L-1.These results demonstrated not only effective inhibition of C. sporogenes, , a pivotal contributor to late blowing defects in cheese but also indicated favourable outcomes in terms of acidity parameters, which are crucial quality criteria for cheese production. The application of Response Surface Methodology revealed that late blowing defects can be prevented using relatively lower concentrations of antimicrobial agents, along with a judicious selection of appropriate cultures. Özellikle, bu çalışmanın da genel bağlamını oluşturan iletişim konusundaki yenilikler, yeni araçlar, yeni sistemler alan yazında birçok çalışmanın konusunu oluşturmuştur. İletişim alanında sözü edilen bu yenilikler şüphesiz yeni medya ortamlarıdır. Günümüzde hem kişiler arası iletişim hem de kurumsal iletişimde yaygın bir biçimde yeni medya temelli teknolojiler ile aracılanan bir süreç gözlemlenmektedir. Özellikle sivil toplum kuruluşları açısından potansiyel pek çok avantajı olan yeni medya kullanımı konusunda sivil toplum kuruluşlarının farkındalıklarının ve kullanım becerilerinin artırılması bir gerekliliktir. Bu noktadan hareketle sivil toplum kuruluşlarının yeni medyadaki rolleri diyalogsal iletişim ve halkla ilişkiler modelleri etrafında merak edilmiştir. The independent variables were drying temperature (50-70 degrees C) and microwave power (0-180 W), while the investigated responses were the drying time (D-t), the rehydration ratio (RR), the water-holding capacity (WHC), the antioxidant activity change (AA-PC), the total phenolic content change (TPC-PC), and the beta-carotene content change (BC-PC). The main criteria for the optimization of hybrid drying of sweet potatoes was to produce dried potatoes in the shortest drying time with a maximum RR and WHC and with minimum bioactive content (AA, TPC, and BC) loss. The optimum conditions were found to be a drying temperature of 54.36 degrees C with a microwave power of 101.97W. At this optimum point, the Dt, RR, WHC, AA-PC, TPC-PC, and BC-PC were 61.76 min, 3.29, 36.56, 31.03%, 30.50%, and 79.64%, respectively. The results of this study provide new information about the effect of the hybrid drying method (MW-HA) on the rehydration ability and bioactive compounds of sweet potatoes, as well as the optimum values of the process.Article The Physico-Chemical and Microbial Content of White Cheese Obtained Using Plant-based, Animal and Microbial Enzymes(2022-12-01) Arisoy, Zerrin; Ertürkmen, Pelin; Akbal, SinanIt is required to increase the amount of coagulant enzyme substitutes obtained from various sources that are equivalent to animal rennet in order to meet the rising demand for cheese. This study looked into the availability of plant-based enzymes as an alternative to rennet made from animals and microorganisms, which are frequently employed in the manufacturing of white cheese. Using animal (100% chymosin), microbial (obtained from Muchor miehei), and plant-based (Safflower seed, 80% chymosin-20 percent pepsin, purified from Cartamus tinctorius L.) enzymes, 6 varieties of raw and pasteurized milk cheese were made for this purpose. The values of SH, ripening index, water-soluble nitrogen (WSN), nitrogen dissolved in trichloroacetic acid (TCA), and yeast-mold increased after storage in cheeses made with various coagulant enzymes. During storage, the values for dry matter, pH, protein, Total Aerobic Mesophilic Bacteria (TAMB), lactobacilli, lactococci and coliforms all reduced. In terms of L*, a* and b* values, different rennet usage was discovered to be significant among cheese samples. The casein protein began to hydrolyze and the strength of the bands decreased in SDS-PAGE with the breakdown of the αs-casein and β-casein fractions on the 90th day of maturation in P1 and P4 numbered cheeses, which used plant-based enzyme made from raw and pasteurized milk. These changes in casein fractions resulted in a bitter taste in cheese made with plant-based enzymes. The use of plant-based enzymes in the manufacturing of white cheese was shown to produce results that were comparable to those of animal and microbial enzymes and did not have any negative effects on the cheese's physicochemical and microbiological quality parameters. When making fresh white cheese, the plant-based enzyme extracted from Carthamus tinctorius L. can be employed as a promising source of plant coagulants.Article SİYASETNAME’DE BÜROKRASİ(2023-04-04) Ergün, HüsnüBürokrasi, günümüzde bazen olumsuz sıfatlarla ilişkili olarak anılsa da işlerin düzenli bir şekilde yürütülmesine olanak veren bir yaklaşımdır. Bu çalışmada, çağında ve günümüzde hala isminden söz ettiren Nizamülmülk‟ün eseri Siyasetname‟de de bürokrasinin öncülleri araştırılacaktır. Hiç bir şeyin birden bire ortaya çıkmadığı, belli sebeplerle görüldüğü, belli aşamalardan geçerek ortaya çıktığı düşüncesinden hareket edildiğinde bürokrasinin de tarih içinde faklı şekillerde ortaya çıktığı söylenebilir. Bürokrasinin iş bölümü, uzmanlık ve liyakat, kurallar, hiyerarşik yapı, kişisel hak ve mülkiyet ile resmi hak ve mülkiyetin ayrılması özellikleri temel alınarak siyasetnamedeki öğütler incelenmiştir. The study was carried out using the qualitative method. A total of 118 employees in five-star hotels and sports centers participated in the study. Common factors affecting employee satisfaction were thematized as relationship with co-workers, nature of the job, relationship with superiors, salary, working hours, career opportunities, and job security. The factors affecting the dissatisfaction were thematized as inefficient salary, lack of relationship with superiors, job insecurity, and lack of relationship with co-workers. In the context of satisfaction in tourism, the theme of Facilities and benefits differs from sports. In the context of dissatisfaction with sports, the theme of lack of career opportunities differs from tourism. Based on the study findings, practical implications are presented for the two industries in an aim to increase the performance and productivity of their businesses. The study conveys its originality by identifying the employee dis/satisfaction factors in the tourism and sports industries.Article Citation - WoS: 1THE EFFECT OF BRANDS' PERCEIVED SOCIAL MEDIA MARKETING ACTIVITIES ON CONSUMERS' ONLINE OPINION SEEKING AND SHARING BEHAVIOR(Mehmet Akif Ersoy Univ, 2023-03-29) Koker, Nahit Erdem; Ozer, Cevat SercanNowadays, there are many factors that affect the way people perceive brands. Moreover, these perceptions affect people's attitudes and behaviors on many issues. Especially, the increase of social media's influence has brought a new dimension to the interaction of individuals with brands, as well as influencing the factors that shape the relationship between them. This study attempts to observe how the perceptions of marketing activities carried out through social networks affect individuals' online opinion seeking and sharing behaviors. In addition, it is desired to discuss the effects of variables such as brand admiration, gender, online product purchase and online staying time that may have an impact on these perceptions. A quantitative research method was used. The questionnaire technique is a data acquisition techique of this method; this was used to obtain primary data. Difference tests (t-test, One Way Anova) and relationship test were performed in the analysis of the data obtained. The research conducted as part of the study confirmes that this perception is largely related to the behavior of seeking and transmitting opinions online. It was also found that the time spent online, the frequency of product purchases, brand admiration, and gender of users are related to this perception.
